Duddell’s ‘Chefs-in-Residence’ initiative aims to showcase the diaspora of Chinese cooking, highlighting how Cantonese cuisine has traversed the globe and evolved in new cultures. Over the course of 2018, four celebrated chefs will take over our Michelin-starred dining room to present one-off menus reflecting their own individual style.

First up is Executive Chef, Dan Hong of two Merivale restaurants; Mr Wong and Mrs G’s in Sydney. Dan Hong has captured the attention of Sydney’s foodies and cemented his reputation as one of Sydney’s fastest rising talents. Since opening its doors, Mr. Wong has earned a string of highly regarded awards and accolades including: ‘Best New Restaurant’ and was included was included in The Australian’s Hot 50 Restaurant List, 9th best restaurant in Australia. Dan’s cooking draws inspiration from his Vietnamese heritage and his style of cuisine is fresh, simple and downright tasty which is reflected in his bespoke menu for Duddell’s ‘Chefs-in-Residence’ series.

“All my food training is European and my background is Vietnamese, but I’m passionate about Chinese food. When Chinese first migrated to Australia, Chinese food was changed to suit Australian people’s taste. It was only in the mid-90s that real Cantonese and regional Chinese food came to the fore… I wanted to show my style of Chinese food. More than anything, the food needs to be fun.” - Dan Hong
