The World's Greatest Butcher
Dario Cecchini, from the Tuscan village of Panzano, has been called “the world’s best butcher” by the New York Times. The eighth generation butcher in his family, he practices butchery as a time-honored art (one that involves care and respect for the animal). Known to some as a rock star and to others as a Dante-quoting Renaissance man, he brings plenty of theatricality and showmanship to his guest chef appearances, which have sold out at top restaurants in New York and London.
Dario’s dinner and brunch at Grappa’s Cellar will feature a live butchery demonstration and a nose-to-tail menu paired with award-winning Fontodi wines from his home region of Chianti:
