NUR owes its influences to a few revolutionary pioneers in the culinary field – the world renowned Belmond Le Manoir Aux Quat’Saisons by Raymond Blanc and Copenhagen’s Nordic Food Lab (NOMA) and of course, Hong Kong’s own rich edible playground and colorful food history. \n \nMuch of the concept is based around the idea of “nourishing gastronomy,” which is implementing the best culinary techniques coupled with nutritional science and research to present a responsible gastronomy that is not only delicious but aims to leave diners feeling light, satisfied and inspired. As much as NUR is inspired by the Scandinavian and Nordic way of preparing food, the cuisine is completely their own. \n
